In the summer edition of the Brewmasters four-course meal, the featured main dish was a wonderful marinade using Summer Honey Wheat Ale. This beer lends itself greatly to marinades and it also plays well with spice. We wanted to keep the summer main dish pretty light so we landed on shrimp as our protein. The marinade is pretty straight forward, with the featured ingredients being the SHW, chili paste, and honey. A superb mix of sweet, spice, tart and lightness. You can marinade for 30 minutes, or up to 24hrs, either one works! Be sure to not over cook your shrimp. This is the easiest thing to do wrong! Shrimp only need about 5-6 total minutes of cook time. Just put them on a hot grill and flip after 2 minutes! Trust me!
Combine beer, honey, chili paste, salt and onions into a large bowl and mix well. Add the cleaned shrimp to the mixture and marinate for up to 24 hours. Place shrimp onto bamboo skewers, 5 or so on each. Place skewered shrimp onto a hot, oiled grill, and cook for roughly 2-3 minutes a side. Makes 5 servings.
