Pork Chops w/ Caramel Apple Spiced Ale Chutney

Pork chops and apple sauce! Well, not quite, but way better! To celebrate the release of Blue Moon’s Fan Creation we got together and brought a dish that is a perfect bridging of the new Caramel Apple Spiced Ale. Once I tried this awesome new beer, I was immediately inspired. The flavors and spices in the CASA would lend itself perfectly to a savory/sweet chutney. My idea was to reduce it with some sweet onions, along with some complementing flavors like some granny smith apples to make this wonderful spread for a big juicy bone-in pork chop. Onions, pork, apples & beer are some of my favorites. If you can spare a bottle of CASA, you will thoroughly enjoy this recipe.

Method


Chutney:

Heat oil in a medium sized saucepan, add in onions. Sautee for a few minutes until the onions are soft. Add in ginger and apple cider vinegar. Cook and stir for about a minute, then add in apples, nutmeg, cinnamon, beer, sugar lemon and salt. Reduce heat to medium low, and cook for about 30 minutes or until liquid is almost gone. Once at this stage, remove from heat and set aside for serving.

Pork Chops:

Take 4 bone-in, thick chops, generously season with salt & pepper, and place on a hot grill for about 6-7 minutes a side (pending thickness). Remove from heat and let rest 5 minutes. Serve atop fresh spinach, smother with CASA Chutney and enjoy!
