Bacon Jam & Cheese Board

We broke down and finally did a cheese board. But there is no better way to enjoy wine than with cheese. Lot 405 is a delicious and extremely drinkable Pinot Noir that deserves something a bit special. So, I went there. Bacon Jam. This came from an idea I saw browsing some sort of media I can’t remember. But to spice up the traditional cheese and crackers, I created this savory and sweet jam out of natures best ingredient, Bacon.

Method


Bacon Jam:

Place bacon into a small sauce pot and cook over medium heat for 5 minutes rendering out the fat. Add in onion once bacon becomes slightly brown and sauté for 5-8 minutes until onion has begun to caramelize. Skim off bacon fat and discard. Add in vinegar and red wine and simmer for an hour until liquid has reduced enough to become the consistency of syrup. Using an immersion blender (stand blender works as well) puree until smooth. Let cool & serve with cheese board.
