Stuffed Mushrooms

Method


Preaheat oven to 400*

In a large saucepan over medium heat, sauté onions until soft and translucent. Add in balsamic and sauté for another 2 minutes. Then add in spinach and sauté until wilted. Remove from heat and transfer to a small mixing bowl. Fold in Manchego cheese.

Once the stuffing is cool enough to handle, stuff 1 table spoon or more into each mushroom (enough so that it covers the cavity and then some).

Arrange mushrooms on parchment lined baking sheet and bake for 10-13 minutes.

Remove and let cool before serving.

Yield: 12-20 servings
