Peanut Butter Cookie Ice Cream Sandwich

Not the most traditional Prosecco Pairing, but it will make you smile. Who doesn’t love a Peanut Butter cookie? And, adding ice cream? and Chocolate?? This is a fun, yet decadent dessert that will be a fun pairing with this great varietal from CH Wine. Try it and don’t be afraid to smile!

Method


Preheat Oven to 375*

In a large mixing bowl, combine sugar, butter and egg until creamy. Then add in peanut butter and vanilla and mix until creamy. Stir in salt, baking powder, flour and cocoa powder until fully incorporated and creamy still. Form dough into 1 inch round balls and coat in granulated sugar. Place evenly onto a parchment lined cookie sheet, and press down with a fork to create indents on each cookie round.

Place into oven for 12-15 minutes, until golden brown.

Let cool and place 1 small scoop of vanilla ice cream onto half the cookies. Top with a matching cookie and lightly press down until it is a sandwich. Place cookies into freezer for 30 minutes before serving.

Yields 10-12 cookies, and 5-6 Sandwiches.
