Heirloom Caprese Salad

Celebrate the end of tomato season with an easy twist on the classic caprese salad. There is something to be said about a nice chilled glass of Sauv Blanc and a perfectly balanced salad. I love using fresh herbs in dressing, and this is a perfect way to end the tomato season as we gear up for the heavy winter vegetables and meat dishes. Enjoy on your next sunny afternoon!

Method


In a blender, combine parsley, basil, lemon juice, vinegar, honey, olive oil and a pinch of salt. Blend until smooth.

Slice tomatoes and mozzarella. Plate on top of arugula and drizzle dressing over the salad.
