Sweet Chili Shrimp

A fun summer wine pairing, utilizing the seasonality of stone fruits. Lot 305 is a wonderful, crisp white wine perfect for summer. We wanted to create a simple, somewhat familiar food pairing that really had you reaching for your wine glass after a few bites. Sweet chili sauce usually is really thick and full of corn starch. We decided to make our own, and get rid of all that heavy, sugary liquid. By making our own sauce, we were really able to temper the heat and sweetness, making a perfect blend to compliment this wine. Give it a go today! The sauce will keep in your fridge for about 2 weeks.

Method


Combine all ingredients for chili sauce, mix well and heat over medium heat until reduced by half. Approximately 30-45 min. Let cool and set aside. Makes approx 2 cups.

Once sweet chili sauce has cooled, use _ cup to marinate shrimp for up to 24hrs.

Skewer Shrimp & Nectarines every other, makes about 5 full skewers. Place skewers on grill over high heat and cook 2-3 min per side. Serve with generous dish of sauce and white rice. Makes 5-8 skewers.
