- 3 pounds of beef chuck, cut into 1 1/2 inch cubes
- Salt & fresh ground pepper
- 2 tbsp oil
- 3 slices of bacon
- 2 onions, quartered
- 2 cloves, studded in the onions
- 2 carrots, peeled & chopped
- 2 sprigs of thyme
- 1 bay leaf
- 2 cups red wine
- 3 diced tomatoes
- 1 small head of garlic, chopped
- 1 strip orange zest
- 2 cups beef stock
